Order breakfast at a diner in the American South and there's a good chance you'll see biscuits and gravy on the menu: a split biscuit smothered in a creamy white sauce flecked with black pepper. That sauce is country gravy. In October 2026 Hotdogray rolled out a whole country gravy lineup, from hot dogs and tacos to tots and fries. Here's what it is and how to order it.
What Country Gravy Is
Country gravy goes by a lot of names: white gravy, cream gravy, sawmill gravy, and sausage gravy when it's loaded with crumbled sausage. The idea is simple. Take the fat left in the pan after cooking sausage, bacon or fried meat, cook it with flour into a roux, then whisk in milk until it thickens. Black pepper is the classic seasoning. In other words, it's a kind of béchamel built on meat drippings, which makes it more savory, and it's a foundation of a lot of Southern home cooking.
Biscuits and Gravy: A Breakfast From Appalachia
A Southern biscuit is nothing like a British biscuit. Think of an unsweetened scone, a little crisp outside and soft inside. Early biscuits were dry and hard; it took baking soda and baking powder, which arrived in the mid-1800s, to make them light and fluffy.
Biscuits and gravy is generally traced to Southern Appalachia in the late 1800s. Many people there worked in sawmills, pork and flour were cheap, and a plate of gravy-covered biscuits could carry you through a morning of hard labor. The name "sawmill gravy" is often tied to that history. Some accounts push the pairing back to the Revolutionary War era, but food historians don't agree on that. The Appalachian chapter is the one most sources line up behind.
Beyond Biscuits
In the South, cream gravy goes on plenty more than biscuits: fried chicken, mashed potatoes, and chicken fried steak, a breaded and fried steak that often arrives under a blanket of it.
Not the Same as Poutine Gravy
Both are called gravy, but Canadian poutine uses a brown gravy made from beef stock, while country gravy is a milk-based white gravy. Different color, different flavor. For poutine versus chili fries, see this post.
Hotdogray's Country Gravy Lineup
- Country Gravy Dog $80: a hot dog with country gravy and bacon bits.
- Country Gravy Bacon Taco $60 and Country Gravy Chili Taco $65 (walking tacos)
- Breakfast Tots $70: tater tots with country gravy and bacon, a classic American breakfast combo.
- Country Gravy Chili Fries $75 (fried sides)

FAQ
Q: Is country gravy the same as the white sauce on pasta?
A: It's a similar idea: both are white sauces made with flour and milk. The difference is that country gravy is usually built on meat drippings and seasoned with black pepper, and in the South it goes over biscuits and fried food, not pasta.
Q: Can I add gravy to other hot dogs?
A: Yes. Hot dogs and walking tacos can both add country gravy for +$15.
Q: Can I add gravy to fried sides?
A: The add-on list on the menu only covers hot dogs and walking tacos. For gravy on fried sides, order the Breakfast Tots ($70) or Country Gravy Chili Fries ($75).
Q: When can I get it?
A: Wed, Thu, Fri + every other Sat, 8PM to around midnight. The kitchen is closed on Tuesdays. Weather or special circumstances can change that, so message us on LINE to be sure.
